Sarah’s Kale Salad
My lovely friend, Sarah, came over to my house for family dinner and offered to make us a salad. Little did she know, I was poaching her recipe the whole time for this blog! This is a delicious and healthy salad that requires almost no dressing. Because it’s kale, it also holds up overnight for leftovers the next day. At the end, there’s a little secret paloma to congratulate you on being such an amazing cook.
Ingredients:
1/2 grapefruit
2 tbs olive oil
1 tbs lemon juice
Small bunch of kale, core stems removed, cut into edible pieces
1 avocado, cut into bite sized pieces
1/4 red onion, diced
4 oz goat cheese
Salt & Pepper
Tequilla, slice of lime and soda water (for your paloma)
Directions:
Supreme the grapefruit (which is basically a fancy way of saying: with a paring knife, cut the peel off the grapefruit and then cut fruit out of the veins: see this video on YouTube). Reserve juices.
Whisk together olive oil, 1 tbs of the reserved grapefruit juice, lemon juice, and a touch of S&P. Dress the kale salad, add remaining ingredients and toss with a little more S&P. So easy!
While your friends are waiting for their delicious salad, make yourself a little paloma! In a nice highball glass, add ice, the remaining grapefruit juice, 1 oz of tequilla, a squeeze of lime and finish off with soda water. Sooooo tasty!
